Courtland Reiley | Chef d’ Cuisine
A 3rd generation born and raised Jacksonville native, Courtland has achieved recognition and high acclaim for his culinary abilities at his modest age of 31. Courtland’s career started at Bistro Aix. Under the skillful guidance of Executive Chef Tom Gray, Courtland spent 7 years learning and honing his trade. He started as a line cook and worked his way up to Sous Chef and Catering Chef at Bistro Aix as he continually pushed the culinary envelope on new food trends and food designs. Courtland, then as now, is often heard saying “We are going to save the world one plate at a time”. After departing Bistro Aix, Courtland moved to St. Augustine began working at Opus 39 as Chef d’ Cuisine. For 4 years he specialized in creating daily, multi-course tasting menus that utilized locally grown produce, house made bakery items and locally caught seafood. One of Courtland’s newer passions is the exploration of molecular cooking and its combination with classic cuisines. Courtland is a perfect fit for the culinary team at Eleven South Bistro.
